2 tsp. paprika
4 small to medium potatoes, sliced
1 red pepper, sliced
1/2 tsp.freshly ground pepper
Pinch of sea salt
1/2 cup of red onions, diced
3 leaves of fresh lemon basil, chopped
1/4 cup of olive oil
In a bowl mix paprika, salt and ground pepper.
Place olive oil in saucepan on low heat for 3 minutes
Place potatoes in saucepan and turn heat to high for 10 minutes.
Place red onions in pan and lower heat to medium high.
Sprinkle dry ingredients in pan and toss until potatoes are fully coated
Add red peppers and let simmer for five minutes.
Plate and enjoy with friends!
***Add a drizzle of your favorite ranch dressing for a cool contrast.
Beverage: A glass of your favorite red wine or frozen fruit cocktail
